Think cherries in syrup rather than cherries on the stem: concentrated, rounded, a little confected, without fresh fruit's crispness. Natural processing tends to produce it — long drying inside the fruit deepens sugars — though fuller washed lots from Central and South America can show it too. Sitting between the chocolate lover's comfort zone and the berry chaser's, cherry makes a fine bridge into fruitier coffee.
