This coffee comes from El Diviso, the family farm of Nestor Lasso in Huila, Colombia. The Bourbon AJI variety undergoes an intricate process: 36 hours of oxidation followed by 60 hours of anaerobic fermentation, finishing with a thermal shock treatment before gentle machine drying. The cup delivers lemongrass and cherry notes in a complex yet clean profile—ideal for filter brewing on special occasions.
