Alberio Lugo grows this Pink Bourbon variety on his San Pedro farm in Acevedo, Huila, southern Colombia. The coffee ferments under water before being washed and dried—a slow route that yields a delicate, precise cup with notes of peach, white tea, and cherry blossom. Roasted light, it's an outspoken filter coffee at its best as a pour-over for moments when you sit down to savor it.
