Illumination Gesha

Roaster notes

Delicate florals and botanical aromatics combine with winey acidity and a syrupy, clean texture, creating an elegant and remarkably vibrant cup. High in the clouded peaks of Volcán, Panama, lies Finca Deborah, where producer Jamison Savage pioneered Carbonic Maceration techniques borrowed from winemaking to ferment pulped cherries in CO₂-rich tanks. This innovative approach allows Gesha trees to slowly develop cherries that are exceptionally sweet and complex, resulting in a remarkably vibrant cup that exceeds expectations for those who appreciate clean, aromatic coffees.
