Canaris

Roaster notes

Canaris is a community lot from the province of Ferreñafe in Lambayeque, Peru, representing six small-scale growers with farms located around 2,000 masl. The cherries undergo a washed process featuring a 12-hour fermentation in whole cherry, followed by depulping and an additional 48 hours of fermentation prior to washing. This controlled development preserves clarity and structure, resulting in a bright and clean cup that represents the unique terroir from Peru.
