Sweet, slightly musky dark-berry fruit — the signature note of Ethiopian natural-process coffee.

No note is more mythologised in specialty coffee, and few are more real. Dry whole Ethiopian cherries slowly on raised beds — Yirgacheffe and Guji above all — and the sugars ferment toward a deep, jammy blueberry with a faint musky-floral undertone. Most drinkers meet blueberry before any other fruit note, and many spend years chasing that first revelatory cup.
