This washed special-prep Grade 1 lot from Bishan Wate Washing Station in Guji brings together cherry from around fifty smallholder farmers. Selection is meticulous, with cherry picked at perfect ripeness and floated for quality before a longer 48-hour fermentation and slow drying on raised beds for approximately 21 days. The result is an immediately expressive yet wonderfully clean cup with syrupy sweetness, tasting of blueberry and peach iced tea up front with ripe prune depth.
