Toffee happens when sugar browning goes deep: butter-rich sweetness cooked dark enough to pick up a pleasing bitter edge and a dense, chewy persistence. Fuller-roasted Latin American coffees develop it readily, extended development pushing sugar chemistry past lighter, softer sweetness. In milk drinks it's magnificent — the note holds its shape where subtler flavours drown.
