Leave part of the cherry's sticky mucilage on the bean while it dries — the honey process popularised in Costa Rica — and the cup that results often shows exactly what the name promises: a floral, faintly herbal sweetness rounder than plain sugar. Clean washed lots grown at altitude carry the note too when ripe fruit sugars come through undamaged. It's the sweetness to seek when caramel feels too heavy and fruit too loud.
