This washed Ethiopian heirloom from the Bishan Wate Washing Station in Guji brings together cherries from fifty smallholder farmers near the Wate River. Layered and intense with a very sweet character, it opens with bergamot and candied orange before revealing delicate chamomile hints on the finish. This special premium preparation features selectively harvested day lots processed through careful floating, depulping, forty-eight hour fermentation, and twenty-one days of raised bed drying to exceptional consistency.
