Roaster notes

This coffee comes from Gaitania in southern Tolima, where the Nasa Wesx indigenous community grows it using traditional shade-grown methods beneath a protective canopy of trees. The beans are naturally processed with an additional 40-hour anaerobic fermentation that imbues them with dark fruit and floral flavors reminiscent of red wine. Expect notes of fermented plum, blackcurrant, and violet in each cup—a true reflection of the region's unique culture and environment.
