This Ethiopian coffee from the Uraga region of Guji is processed using carbonic maceration—a technique inspired by winemaking that creates a CO2-rich environment to develop unique flavors. The cherries come from smallholder farmers practicing traditional intercropping in this area once part of Yirgacheffe, now recognized as its own coffee-producing region. The cup offers juicy, floral notes with bright raspberry and cherry character.
