This natural process coffee from Nicaragua's Nueva Segovia region is produced by Maria Eugenia Herrera on her rainforest farm, where the unusual Bourbon Tekisic variety grows among palm trees and fruit trees. The cherries are transported to the Bridazul processing station for a brief fermentation before being slowly dried in shade on raised beds. The cup reveals notes of dried strawberry, plum, and violet.
