Roaster notes

This coffee comes from the Gerse Kebele in Ethiopia's Yirgacheffe region at 2,000–2,200 meters above sea level. Produced by Biniyam Aklilu who works with small local farmers, cherries are dried on raised beds and hand-sorted for defects while growing under shade trees in clay-rich soil. The result is a naturally processed cup with delicate florals, apricot, and honey, featuring gentle acidity and a finish reminiscent of peach iced tea.
