Roaster notes

Sadayana is the Sundanese word for working together—more than 200 farmers from West Java bring their cherries to this washing station established in 2022 with support from Sucafina. After careful hand selection, the coffee ferments for 120 hours anaerobically in sealed bags before being dried as honey on raised beds for 10 to 14 days.
