At the Volcan Azul estate in Costa Rica's West Valley, producer Alejo Castro Kahle has introduced modern fermentation methods to achieve extraordinary flavour profiles. This lot features H3, a hybrid of Ethiopian heirloom and Caturra varietals, processed using a warm anaerobic method where cherries are exposed to higher temperatures during fermentation. The result is a deliciously funky profile, full of blueberry and fig sweetness.
