This light roast from Yiver Vargas in Pitalito, Colombia grows beneath banana trees, avocados, and sugarcane—the shade allowing cherries to ripen slowly for greater sugar development and complexity. After harvest, the coffee undergoes a double fermentation process that deepens sweetness and rounds out acidity while amplifying fruit character without overwhelming the cup. The result is a vibrant espresso with syrupy body, clear sweetness, and notes of caramel, brown sugar, and apricot leading to a clean, lingering finish.
