This light roast from Finca Idealista in Matagalpa, Nicaragua is grown by Benjamin Weiner on a farm that uses no pesticides—instead employing mushrooms to deter unwanted insects and volcanic filters to protect water sources. The Yellow Pacamara variety produces large yellow berries that build complex flavors with tropical fruit tones and a soft aftertaste. Beyond exceptional coffee, the farm pays pickers double salary and invests in purchasing rainforest land for protection.
