Roaster notes

This washed microlot comes from Richard Cotrina's Finca El Eucalipto, a small 2-hectare family farm in the community of Potrero Grande, Tabaconas, within Cajamarca, Peru. The Bourbon varietal is grown at 1500 meters above sea level and processed with care—ripe cherries are floated for density selection, fermented for 60 hours, then pulped, washed, and dried on raised African beds under a solar drying tent for 15-18 days. Richard is a member of the Aromas del Valle Co-operative, which has been providing fermentation training to increase cup complexity.
