An exceptional female-farmed coffee from Huehuetenango, Guatemala. Roast level: 3/5. This microlot is produced by Juana Jimenez Vargas. She ensures that all the cherries were picked at peak ripeness before further processing. The coffee was pulped the same day, fermented for 48 hours, washed, and then kept in fresh spring water for another 12 hours to enhance sweetness and clarity before being sun-dried on patios for six days.
