Colombia, Ají 2

Roaster notes

This rare Ají Landrace variety was discovered by José Hernán Salazar Benavides on his farm La Guaca in Pitalito, Colombia, where he noticed trees emitting a distinctive sweet red pepper scent during harvest. After isolating these unique trees and perfecting an anaerobic washed process, the coffee placed sixth at the Colombia Cup of Excellence among over a thousand submissions. Genetic testing later revealed this variety is a first-generation offspring from wild Ethiopian coffee forests, similar to Gesha, offering notes of blackcurrant, toffee, and vanilla in the cup.
