Kercha

Roaster notes

This coffee comes from Kercha Station in Ethiopia's Guji region, where ripe cherries undergo an extended anoxic fermentation called the 'Wine Process'—a technique adopted from winemaking. Cherries are sealed in stainless steel tanks for 4–5 days before drying on raised beds for up to 18 days. The result offers lively stone-fruit brightness reminiscent of apricot, deep purple wine gum notes, and syrupy sweetness.
