This exceptional natural-processed coffee hails from the celebrated Gedeo zone near Yirgacheffe, Ethiopia, where indigenous heirloom varieties mature slowly at 2,200 metres altitude. The cherries are sun-dried on raised beds with their fruit intact for three weeks, allowing the beans to absorb a refined, syrupy sweetness alongside sparkling crystalline clarity. The cup opens with ethereal elderflower cordial and bright lime zest, evolving into jasmine aromatics with a clean, tea-like finish that balances floral elegance with deep natural sweetness.
