This Gesha from Bruselas, Huila was born from necessity when producer Jhonatan Gasca harvested his entire crop at once to beat heavy rains—creating an accidental blend of green and ripe cherries he found remarkable. Extended anaerobic fermentation followed by thermal shock rinsing amplifies the floral and herbaceous character, delivering bright notes of lemon verbena, jasmine, ginger, and lime.
