SWAN SONG - Colombia
Roaster notes
From Santa Mónica farm in Armenia, Quindío, Colombia, this Castillo variety coffee is managed by Jairo Arcila and processed through a distinctive washed method with cherry co-fermentation followed by 48 hours of dry anaerobic fermentation. Grown at approximately 1,400 to 1,500 metres above sea level on volcanic ash soil, the beans develop an intensely sweet, nectar-like character that delivers bold notes of Cherry Tangfastics, Dr Pepper, and Cherry Liquor in the cup.
