Grown by Nectario Zuñiga at El Oasis farm in Colombia’s Tolima region, this coffee benefits from shade cultivation that encourages slower maturation and increased sugar content. The cherries undergo a unique carbonic maceration process involving aerobic fermentation and controlled drying to develop its distinctive character. This results in a complex cup profile featuring notes of stewed peach, red berries, and vanilla custard.
