This Pink Bourbon from Pitalito, Colombia is produced in very limited quantities as a special semi-washed lot. The cherries are hand-picked and oxidized in open tanks for 72–84 hours before being pulped, washed, and sun-dried for 15–20 days depending on weather conditions. The cup is super bright with notes of white honey, elderflower, and peach, creating a clean and sparkling character.
