This light-roasted Panamaria Filter hails from the Carolina Farm within the Kotowa plantage in Boquete, Panama, where it grows at 1300-1500 meters among biodiverse natural forest. Named after Maria Ruiz, the former plantation chef who helped shape its distinctive character alongside the Boot family, this washed Arabica has been part of their collection for nearly thirty years. The cup reveals a delicate balance of bright orange, sweet caramel, and ripe apricot notes, reflecting the careful cultivation practices that have earned the estate Panama's National Environmental Award.
