Warm days, cool nights and the consistent conditions of the high plateau create ideal conditions for dense, sweet beans with pronounced body. Led by David Ottoni, an agronomist and co-founder of the Brazilian Specialty Coffees Association, this 1,200-hectare operation demonstrates that volume and precision are not contradictory. The plants grow traditionally in the shade of avocado trees, creating a stable microclimate that contributes to even ripening.
