This CM Natural lot comes from Supriyanto, better known as Iyan, a producer working on Mount Suket in Ijen, East Java, Indonesia. His farm sits at 1700 metres above sea level on the Ijen volcano range, where the high-altitude volcanic soil helps create coffees with strong fruit character, balanced acidity and a deep, syrupy sweetness. This lot is process-forward by design. The coffee is placed in a sealed bioreactor tank for 120 hours in an anaerobic environment, injected with carbon dioxide, and then dried as a natural.
