Colombia
Roaster notes
This washed coffee from Hacienda El Rodeo in Colombia's Santander region undergoes a distinctive double fermentation process—first fermenting the whole cherry, then wet fermentation after depulping for 36 hours total before drying on beds for 15 days. The Castillo variety grown at high altitude yields a cup with rich panela sweetness balanced by bright citric acidity, complemented by chocolate and warm spice notes.
