This Pink Bourbon from Finca El Diviso showcases the sought-after cultivar's floral aromatics, bright acidity, and refined sweetness. The vibrant pink cherries thrive at high altitudes where cooler temperatures slow maturation, enhancing sugar development and flavour complexity. After careful handpicking and floating for uniformity, the coffee undergoes a controlled 24-48 hour dry fermentation in sealed tanks before being washed and slowly dried on raised African beds for 15-20 days to ensure consistent moisture reduction.
