Roaster notes

This coffee hails from Yajalón in Chiapas's Tulijá Tzeltal Chol region, where Mayan farmers from the Tzeltal people cultivate Arabica using organic methods. Around 750 farmers work together through their cooperative, growing coffee alongside corn, beans, and chili while receiving support for regenerative practices to adapt to climate change. The washed process brings forth a cup with notes of caramel, roasted hazelnut, and nougat.
