This coffee hails from Yajalón, a municipality in Chiapas, Mexico, where Mayan farmers from the Tzeltal people cultivate Arabica beans using organic methods. Around 750 farmers are connected to a cooperative that supports them through training and resources for regenerative cultivation practices. The washed process highlights notes of nougat, caramel, and roasted hazelnut in this single-origin offering.
