This Washed Pink Bourbon comes from Juan Jimenez Peña and his wife Leidy at Finca El Porvenir in Santa Bárbara, Palestina, Huila. Selectively harvested cherries are depulped, washed and dried slowly on raised beds for approximately twenty days. White tea florals lead the way, followed by melon, honey sweetness and bright citrus acidity with a gentle note of pink grapefruit in the finish.
