This natural process coffee hails from West Arsi, Ethiopia—a region once classified under Sidama that has emerged for its own distinctive coffees. Cherries grown by hundreds of smallholders around the city of Werke are brought to the AASH Washing Station, part of Faysel Yonis's family business, where they're processed as naturals. The result is a cup combining berry-like, spicy, and sweet notes.
