Sourced from the Corralejas region in Cauca, Colombia, this Gesha variety is cultivated on a seven-hectare farm with clay loam and volcanic soil. The cherries are harvested when bright red, de-pulped immediately, and undergo a 24-hour dry fermentation before being washed and dried for ten days. This meticulous process yields a cup characterized by rich chocolate, caramel, cinnamon, and stewed fruits with a syrupy mouthfeel.
