This community lot from Colosay highlights the collaborative spirit of independent growers who support each other through traditional Mingas during harvest and processing. The Bourbon variety is processed using a Frutas Maduras method, where whole cherries ferment before depulping to enhance natural fruit character. In the cup, expect sweet berries and red berry notes balanced by a soft nougat-like sweetness and hints of toffee.
