This Brazilian coffee from the Capricornio project grows in low-altitude regions near the Tropic of Capricorn, where environmental stress during development produces large, slow-ripening cherries with surprisingly complex flavors comparable to higher-elevation coffees. The beans are hand or machine picked, then washed and fermented as part of a sustainable approach that emphasizes water efficiency and reduced carbon emissions across twenty partner farms.
