This coffee comes from Finca Los Tres Potros in El Salvador's Apaneca region, where Carlos Mendez cultivates Cuscatleco variety beans at altitudes of 1450 to 1700 meters above sea level. After careful hand-picking, the cherries are naturally processed—dried for approximately 25 days on raised beds under alternating sun and shade. This patient approach yields a cup with rich red fruit character and wine-like aromatic notes.
