This rare Bourbon Aji coffee comes from Nestor Lasso's Finca El Diviso in Huila, Colombia. The mysterious varietal was named for its spicy, red pepper-like aroma when fresh cherries are picked, discovered after producer Jose Salazar entered it into the Cup of Excellence. Processed through washed thermal shock with anaerobic fermentation, this coffee delivers a sweet and floral cup featuring notes of granadilla, jasmine, and raspberry.
