SL-09 Washed
Roaster notes
Cultivated by brothers Saulo and Ronald Ibias Casa at Finca Tres Cedros in southern Peru’s high Andes, this rare SL-09 lot benefits from cool temperatures that encourage layered flavor development. The cherries underwent an eight-hour fermentation before pulping and a further 48 hours fermenting in mucilage to build sweetness without overwhelming the coffee’s natural florality. Drying on raised African beds followed by a resting period allows the structure and complex floral aromatics to settle, resulting in a cup reminiscent of Colombian CGLE lots with sweet fruit quality.
