Roaster notes

This washed coffee from Chiapas is a blend of Typica, Bourbon, Caturra, and Garnica varieties grown under shade by small-scale producers averaging 2 hectares each. The cherries are processed at Beneficio Comunitario Sibactel in the Tenejapa terroir within the Tseltal community, where farmers apply organic cultivation practices using leaves from companion crops and process wastewater as natural fertilizer to nourish the plants and retain soil moisture.
