Ethiopië – Birbirsa

Roaster notes

This Ethiopian coffee from the Birbirsa Washing Station in West Guji grows at 1800–2100 meters among shaded agroforestry with native trees. The washed process highlights a caramel-sweet profile with mild citrus acidity, full body, and a long silky finish. Mixed heirloom varieties ripen slowly here, developing complexity through careful selection of red cherries during the November to January harvest.
