Colombia - Las Flores, Java Thermal Shock Washed

This Java variety from Finca Las Flores in Huila, Colombia is grown by Jhoan Vergara and his family at 1,750 meters altitude. The cherries undergo a unique processing method: 24 hours of oxidation followed by 60 hours of fermentation with the cherry intact, then washed using a thermal shock at 55°C to remove bacteria before being carefully dried for 50 hours in dehumidification machines.
