Sourced from the Comepcafé Cooperative in Morales, Cauca, this microlot highlights Pink Bourbon cherries grown on steep, shaded slopes that encourage slow maturation. The beans undergo an extended fermentation process before being washed and dried in parabolic tents, a method designed to broaden the flavor spectrum and enhance complexity. The resulting cup offers a rich balance of persimmon, red apple, and blanched almond notes with a medium body.
