This espresso blend hails from India's Malabar Coast, stretching south of Mumbai through Kerala toward the historic trading port of Cochin. It features beans aged using the unique Monsoon process—a centuries-old technique originally developed when sailing ships carried coffee to England, exposing the beans to heavy rain and humidity during their long voyage. Today this aging is carefully controlled by exposing the coffee to monsoon winds while regularly turning it, allowing a distinctive character to emerge alongside notes of honey, nectarine, and hazelnut.
