Finca Timbuyacu is a third-generation family farm in Rodríguez de Mendoza, Peru. The name comes from Quechua—'timbu' meaning 'boiling water' and 'yacu' meaning 'water'—named for a spring on the property that appeared to be bubbling with such force it seemed to boil. This Red Bourbon undergoes extended fermentation followed by full washing, bringing out depth of flavor and fruitiness characteristic of this varietal at its finest.
