El Cedro Semiwashed
Roaster notes
From highlands above the Magdalena River valley at over 1800 meters, this coffee comes from Servio Tulio—a young grower who converted part of his family's sugar cane land to specialty coffee. The semi-washed process involves selective picking of ripe cherries, fermentation in sealed barrels for 48 hours, and drying on air-flow beds. On the cup, expect super sweet notes of fig and maple syrup with bright acidity reminiscent of berries, mango, and white peach.
