Roaster notes

We met Julio Chávez last year on our visit to Cooperativa Incahuasi in Cusco. He is president of the cooperative and a contributing farmer with two plots totaling some three hectares—one at 1800m, the second higher at 2300m. His farm sits close to the cooperative's processing facilities, allowing him to deliver his harvest from the higher plot by gravity through a pipe directly connected to the station.
